Jamaican Jerk Chicken Recipe
Great Jamaican jerk chicken recipe for home.
INGREDIENTS
4 Leg quarters chicken
1 broiler/fryer type
2 tbsp Jamaican hot pepper sauce
1 tsp salt and black pepper
½ tsp cinnamon
½ tsp allspice
¼ cup onion, minced
2 tbsp sugar
2 tbsp pepper, red, minced
2 tbsp hot pepper jelly
¼ cup escallion chopped
1 cup rice, cooked
PREPARATION
1. In a shallow container, place the hot pepper sauce.
2. Add chicken, one piece at a time, turning to coat.
3. Sprinkle salt, cinnamon and allspice over the chicken.
4. Place the chicken, skin side up, in a single layer in a large shallow
baking dish.
5. Bake at 400 F, basting twice with pan juices for 45 minutes or until
the chicken is fork tender.
6. Arrange the rice and chicken on a serving platter.
Jamaican Curry Chicken Recipe
A popular Jamaican chicken recipe in Kingston blended with curry powder.
Ingredients
2 tbsps. vegetable oil
2 garlic cloves, finely chopped
1 tsp. curry powder
¾ cup chicken breast cubed,
¼ cup onion, chopped
½ cup potato diced
½ cup water
2 tbsps. Chicken stock
¼ cup grated ginger
¼ cup coconut milk
Preparation
1. In a frying pan, heat the oil and fry the garlic until golden brown.
2. Add the curry powder, stir to mix thoroughly, and cook for 1 minute.
3. Add the chicken and stir well to coat the meat in the curry mixture.
4. Add the onion, potato and a quarter-cup stock, and stir-fry over medium
heat
until the potato is just cooked.
5. Stir in the chicken stock, ginger and coconut milk, and simmer gently until
the sauce thickens.
6. Turn into a bowl and serve.
Jamaican Stew Chicken Recipe
A special blend of Jamaican creamed style corn and spices.
Ingredients
3 cups Jamaican chicken stock
1 can creamed corn
2 cups cubed chicken breast
3 tbsps vegetable oil
1 carrot diced
½ cup diced onions
1 stalk escallion diced
1 egg beaten
½ tsp. MSG (optional)
3 tbsps. water
1 tbsp flour
¼ tsp salt
¼ tsp black pepper
¼ tsp allspice
3 sprigs parsley
Preparation
1. Heat frying pan then add vegetable oil and fry cubed chicken breasts and
set aside.
2. Bring chicken stock to a boil, add creamed corn, carrot, onions and
escallions.
3. And return to a boil to create a stew.
4. In a small bowl, blend water and flour.
5. Slowly add flour mixture to stew, stirring constantly, until thick.
6. Add cubed chicken breasts and egg.
7. Allow to simmer for 45 minutes.
8. Remove from heat and garnish with parsley.
9. Serve with white rice.
Jamaican Fish Recipe
Ingredients
2½ lb fish fillet
½ tbsp salt and black pepper mixed
¾ cup water
¼ cup melted butter
¼ cup coconut milk
¼ cup onion diced
¼ cup escallion diced
½ cup sweet peppers
½ cup tomatoes diced
½ tbsp scotch bonnet pepper diced
½ cup chopped okras
1 onion sliced
1 scotch bonnet pepper diced into rings
½ bag water crackers
Preparation
1. Season outside fish with salt and black pepper
2. Allow to marinate and stuff cavity of fish with ½
seasonings.
3. In a deep skillet heat melted butter, and add fish and all
ingredients.
4. Cover and allow to cook for until fish is done.
5. Add crackers atop and allow to soak.
6. Remove and serve hot.
Jamaican Recipe Oxtails
A breaded version of the Jamaican oxtail recipe.
Ingredients
2 cups oxtail chopped
½ tbsp tbsp onion powder
½ tbsp escallion chopped
¼ tbsp garlic powder
1 tbsp soy sauce
¼ tsp salt
¼ tsp black pepper
¼ tsp allspice
½ tbsp thyme leaves
¼ cup vegetable oil
1 egg beaten
1 cup bread crumbs
Preparation
1. Cook the oxtail in a pressure cooker or in boiling water until soft.
2. Remove and season oxtail with seasoning and allow to marinate for at least ½
hour.
3. Dip in egg and then in bread crumbs.
4. In a large frying pan sauté escallions and add breaded oxtails.
5. Fry until brown.
6. Serve hot.
